In summer, during holidays or during your receptions, verrines are a must. Light and tasty, they make a perfect starter and their presentation is often very tempting. This week, we offer you a fresh, balanced and delicious recipe for your aperitifs: the verrine of smoked salmon on its avocado cream with ORGANIC chia seeds.

It can be enjoyed either at Christmas time or simply in the warm summer on your terrace where it will bring a touch of freshness and indulgence. We have decided to offer you a variation by including chia seeds. Very nutritious, they will bring a little texture to the avocado cream.

  

  

Ingredients for this recipe:

  • 200 g of mascarpone (or cream cheese)
  • 4 tbsp. chia seeds
  • 2 limes
  • 2 lawyers
  • 3 slices of salmon
  • Salt and pepper

Time :

  • The day before: 5 min.
  • Preparation: 20 mins.
  • Rest: 1 hour.

Stages:

The day before

  • Whisk the mascarpone and add the chia seeds.
  • Cover the bowl with a  Bee Wrap or a plate and put in the fridge.

The day after

  • Squeeze the limes.
  • Remove the mascarpone preparation from the refrigerator (If the consistency seems a little too firm, add a little milk)
  • Cut the salmon into small dice or slices the diameter of the verrine.
  • After removing the pits, pass the flesh of the avocados and the lemon through a food processor to obtain a creamy consistency.
  • Add the salt and pepper and some of the chia seed mascarpone preparation.
  • With a piping bag, pour a little avocado cream into the verrines, then stack, alternating salmon and avocado cream.
  • Finish with your little decoration, here we made a little flower with a few strips of salmon and a little lime zest.
  • Refrigerate for about 1 hour before serving.
  • To be enjoyed chilled – bon appetit!

Small tips: You can replace the lime zest in topping with chives or dill.
