Ingredients for the shortcrust pastry:
- 150 grams of flour
- 75 grams of butter
- A pinch of salt
- 50 grams of water

- 4 large handfuls of spinach
- 4cl fresh cream
- 20 grams of butter
- 1 clove of garlic
- Salt pepper

- 1 shortcrust pastry
- 250 grams of spinach with cream
- 1 log of goat cheese
- 2 eggs
- 150ml of milk
- 3 tablespoons of parmesan
- 1 teaspoon of FEED ME UP digestion mix
- Salt pepper
Steps :
How to make shortcrust pastry?
- In the bowl, put the flour, butter, salt and water
- Knead until you get a smooth dough.
For the spinach:
- Heat water in a saucepan, add salt.
- Remove tails from spinach, wash and spin dry.
- Put the spinach in the water, cook for 10min.
- Prepare cold water in the bowl, add ice cubes. This will stop them cooking and maintain a nice green color.
- Dip the spinach for a few minutes.
- Drain and dry them with a towel.
- Finely chop the spinach with a knife or food processor.
- Meanwhile, melt the butter in a saucepan.
- Put the garlic cut into pieces, add the spinach and mix, cook for 5min.
- Add salt and pepper and to finish the fresh cream and continue cooking 10min.
- To book.
For the quiche:
- Preheat the oven to 200°C
- Butter and flour the pie dish and roll out the dough then poke it in the bottom.
- Put the spinach in the bottom of the pie
- Cut the goat cheese log into slices and place the slices on the spinach.
- In a bowl, break the eggs, add the milk, salt, pepper, the digestion mix and the parmesan, mix everything together and put this preparation on the spinach and the goat cheese.
- Put in the oven for 20 to 25 minutes. Extend if necessary.
- To taste hot or cold and why not accompany it with a good salad.
